You`ve picked an intermediate task to do. It`s not going to be easy if you don`t know how to use Elements.
This tutorial shows some of the skills you need.

First, you have to select photos that have about the same lighting, shadowing, etc. If your face has the light coming in from your right and shadows on the left and the octopus has the opposite, it`s not going to work
Second (and what makes this difficult for a beginner), is you have to have some experience with – a feel for – the selection tools and the clone stamp. You have to be able to pick out a place on the body of the octopus where your head will fit naturally. You`ve got to be able to use CTRL+T (transform) to tweak the head and get it to “fit” where it belongs. The junction where the tentacles come out of your head has to be blended in (normally with the clone stamp) to look real.
It`s not impossible for you to do, but it`s not going to be easy. Cookbooking it will give you the steps but it can`t give you the feel for the tools.
1, Start by practicing making a good selection of your head. Selecting is very time consuming. If it takes 1/2 hour to make a composite of your head on an animal, 15 minutes of it is going to be spending selecting the head. You have to zoom in and zoom out and use more than one selection tool.
2. Use Google images to download a cherry and an apple. Practice making the cherry a growth on the apple. Just find some good, fun – simple and easy-to-combine – images to play with.

3. Use the Clone Stamp to remove an object from a picture.
4. When you feel ready, put your head on the octopus making it look like it belongs.
